How the Cream Converter Works
The Cream Converter divides cream mass by a density that depends on fat content. The default 0.994 kg/L fits heavy cream at 36–40% butterfat.
Read the fat percentage
Check the label: half-and-half (10–18%), light cream (18–30%) or heavy cream (36%+).
Enter the density
Type the density for that fat level from the table below.
Enter the mass
Type the cream mass in kilograms.
Read the liters
The result gives the liquid volume before whipping.
Cream Converter Formula
The cream conversion formula is V = m ÷ ρcream. Cream density falls as fat rises, since milk fat weighs about 0.92 kg/L.
- f
- Fat fraction by weight (0.36 for 36% cream)
- 0.92
- Density of milk fat, kg/L
- 1.036
- Density of skim milk, kg/L
Worked Examples
- Heavy cream: 2 kg ÷ 0.994 = 2.012 L.
- Half-and-half: 1 kg ÷ 1.020 = 0.980 L.
- Whipping: 1 L of heavy cream whips to about 2 L at 100% overrun, while the mass stays 0.994 kg.
Cream Converter Conversion Table
1 kg of 36% heavy cream equals 1.006 liters. The table lists cream densities by fat content.
| Cream Type | Density (kg/L) | Liters per 1 kg | Grams per US cup | Grams per tbsp |
|---|---|---|---|---|
| Half-and-half (12%) | 1.020 | 0.980 | 241 | 15.1 |
| Light / single cream (18–20%) | 1.012 | 0.988 | 239 | 15.0 |
| Whipping cream (30–35%) | 0.998 | 1.002 | 236 | 14.8 |
| Heavy cream (36–40%) | 0.994 | 1.006 | 235 | 14.7 |
| Double cream (48%) | 0.985 | 1.015 | 233 | 14.6 |
| Clotted cream (55%) | 0.978 | 1.022 | 231 | 14.5 |
What is a Cream Converter?
A Cream Converter is a calculator that converts cream mass into volume using a density matched to the butterfat percentage.
Cream is the fat-rich layer separated from milk by gravity or a centrifuge. Higher fat means lower density: double cream at 48% fat weighs less per liter than single cream at 18%.
US rules set minimum fat levels: light cream 18%, light whipping cream 30% and heavy cream 36%. UK and EU labels use single (18%), whipping (35%) and double (48%) cream.
What are the Uses of a Cream Converter?
There are 4 main uses of a Cream Converter.
Pastry production
Pastry chefs convert cream bought by weight into recipe liters.
Ice cream mixes
Makers calculate mix volume for batch freezers.
Coffee service
Cafés convert cream deliveries into pitcher fills.
Dairy plant yield
Separators track cream volume from whole milk.
